The Great American Eat Right Challenge
Obesity, poor nutrition, and physical inactivity are major risk factors for cancer, second only to tobacco use. For the majority of Americans who do not smoke, the most important ways to reduce cancer risk include maintaining a healthy weight and eating well. That’s why the Great American Eat Right Challenge is taking place on August 21, giving everyone a chance to closely examine their nutritional habits and what they can do to improve them.
The recipe below is a wonderful example of combining healthy eating at your next barbecue or birthday party!
Cucumber yogurt dip
This dip will get watery if it sits several hours, so serve it at once. Accompany the dip with crudités, such as sticks of carrots, celery, and peppers.
1 cup lowfat plain yogurt
4 oz. lowfat cream cheese
1/2 cup diced, seeded cucumber
1 clove garlic, minced
1 tablespoon chopped fresh dill
1 teaspoon lemon juice
1/2 teaspoon black pepper
1 teaspoon lemon zest
Stir yogurt and cream cheese until smooth. Add remaining ingredients; stir to blend.
Serve immediately.
Make approximately 2-1/2 cups.
Serves 6 with crudités.
Approximate per serving: 150 calories; 4 grams of fat
End result: I followed this exact recipe and it was delicious. This dip is healthy, and addictive. As expressed earlier though, be sure to serve right away!
Cool as a cucumber...
The cucumber is originally from southern Asia. Mature cucumbers contain large and more bitter seeds than younger cucumbers, so choose tender young vegetables or remove the seeds from older cucumbers before eating them. |
